Mac & Cheese

So Hazel's mom really isn't anything like my mom, except for these two things: my mom is also a living breathing Facebook when it comes to hometown gossip; and she makes the best mac & cheese in the world.
My birthday is actually this week - my first 30th birthday of many, in fact! - and Hazel's birthday was picked to be the day after mine, the 24th. So in honor of both of our awesome moms, here's my mom's fantastic mac & cheese recipe:
Mom's Mac & Cheese
Preheat oven to 350° F.
Melt together in a saucepan:
2 Tbsp butter
2 Tbsp corn starch
... allow to thicken, then add:
1/2 to 3/4 cup milk (start with 1/2 c)
slices of sharp white cheddar cheese (as much as you see fit)
Cook up some noodles; rinse, strain, and toss into an oven-safe container. Mix in sauce, and top with bread crumbs.
Bake for 15-20 min.
Devour and pass out due to extreme joy.
This recipe can, of course, be made gluten-free by using GF noodles (Mrs. Leepers are my favorite) and gluten-free bread crumbs. Enjoy!
